You will be assessed through observation of your skills in the restaurant and skills kitchen sessions. You will also have multiple choice tests on all units that you cover.

About the course

The course is a combination of skills sessions in our state of the art kitchen; class based theory lessons and work experience in our restaurant kitchen. The course has three mandatory units covering Food Safety, Health and Safety and Teamwork in Hospitality. You will also cover food production units covering vegetables, Salad, Fruit, Fish, Meat and Poultry, Sandwiches and Bread products.

Career options

You will have gained suitable skills to work at a basic level in many kitchens locally and nationally. There is the option of a Level 2 NVQ Professional Cookery for those who wish to progress further with their studies into the subject.

Successful completion of our Hospitality & Catering courses can lead you onto a higher level course, university or even into employment.

Course Content - What will I learn?

You will learn the basic concepts of working in a commercial kitchen and with working with different food commodities. You will also gain a theoretical and practical understanding of key concepts linked to food safety and hygiene that are required for working in the industry.
You will gain an NVQ in Hospitality Services. You will gain a Functional Skills qualification in Maths or English. You will also gain a basic food hygiene qualification which is a requirement for working in the industry. You will need to have specialist clothing and knives at a cost of approx 110 pounds. There is also a charge for materials, food and visits etc of approx 90 pounds.
